Kaeng khiao wan : Green Thai curry

Ingredients:

2 tablespoons of vegetable oil
2-3 tablespoons of green curry paste
1 pound of chicken or tofu, cut into bite-sized pieces
1 can of coconut milk
1 cup of chicken or vegetable broth
1-2 tablespoons of fish sauce
1 tablespoon of palm sugar or brown sugar
1 cup of Thai eggplants or regular eggplants, chopped
1/2 cup of sliced bamboo shoots
1/2 cup of sliced bell peppers
1/2 cup of Thai basil leaves
2-3 kaffir lime leaves
1-2 Thai red chili peppers (optional)

Instructions:

In a large pot or wok, heat the vegetable oil over medium-high heat.
Add the green curry paste and stir-fry for 1-2 minutes, or until fragrant.
Add the chicken or tofu and cook until browned on all sides.
Pour in the coconut milk and chicken or vegetable broth, and stir to combine.
Add the fish sauce and palm sugar or brown sugar, and stir until dissolved.
Add the eggplants, bamboo shoots, and bell peppers, and bring to a boil.
Reduce the heat to low and simmer for 10-15 minutes, or until the vegetables are tender and the curry has thickened.
Add the kaffir lime leaves, Thai basil leaves, and Thai red chili peppers (if using), and stir to combine.
Serve hot with steamed rice.
