Mango sticky rice
Ingredients:
1 1/2 cups water
1 1/2 cups coconut milk
1/2 cup granulated sugar
1/4 teaspoon salt
2 ripe mangoes, peeled and sliced
Toasted sesame seeds (optional)
Instructions:
In a saucepan, combine the water, coconut milk, sugar, and salt. Stir until the sugar is dissolved and bring the mixture to a boil over medium heat.
Drain the soaked rice and add it to the coconut milk mixture. Reduce the heat to low and stir until the rice is fully coated in the mixture.
Cover the saucepan with a lid and simmer for 18-20 minutes or until the rice is cooked through and the liquid is absorbed.
Remove from heat and let the rice sit covered for 10 minutes to steam.
Fluff the rice with a fork and divide it into bowls.
Top the rice with sliced mangoes and sprinkle with toasted sesame seeds if desired.
