Massaman Curry With Chicken
Ingredients:
2 tbsp massaman curry paste
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 can (14 oz) coconut milk
1 cup chicken broth
1 large potato, peeled and cut into chunks
1 large carrot, peeled and cut into chunks
1 onion, peeled and cut into chunks
1/2 cup roasted peanuts
2 tbsp tamarind paste
2 tbsp palm sugar
2 tbsp fish sauce
Salt, to taste
Instructions:
Add the chicken and cook for 3-4 minutes, stirring occasionally, until the chicken is browned on all sides.
Pour in the coconut milk and chicken broth and stir to combine. Add the potato, carrot, onion, peanuts, tamarind paste, palm sugar, and fish sauce. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let simmer for 25-30 minutes, or until the vegetables are tender and the chicken is cooked through. Add salt to taste.
Serve hot with steamed rice.
