Pad Thai

Pad Thai is a popular Thai stir-fried noodle dish that is typically made with rice noodles, vegetables, protein (such as shrimp or chicken), eggs, peanuts, and a sweet and sour sauce. It is a flavorful and versatile dish that can be customized to individual preferences by varying the ingredients and level of spiciness.

The rice noodles used in Pad Thai are typically stir-fried with garlic, shallots, and a protein such as shrimp or chicken. Tofu or vegetables such as bean sprouts, carrots, and cabbage can also be added. Eggs are often mixed in with the noodles, and the dish is then topped with crushed peanuts, scallions, and cilantro.

The sweet and sour sauce used in Pad Thai is typically made with a combination of fish sauce, tamarind paste, palm sugar, and chili flakes. These ingredients are mixed together to create a tangy, slightly sweet, and slightly spicy flavor that complements the other ingredients in the dish.

Pad Thai is a popular street food in Thailand and has gained popularity around the world due to its delicious flavors and versatility. It can be served as a main dish or a side dish and is enjoyed by people of all ages.

8 oz. of rice noodles
2 tablespoons of vegetable oil
2 cloves of garlic (minced)
1/2 lb. of shrimp (peeled and deveined)
2 eggs (beaten)
1/4 cup of roasted peanuts (crushed)
2 cups of bean sprouts
2 tablespoons of fish sauce
2 tablespoons of tamarind paste
2 tablespoons of palm sugar
1 tablespoon of soy sauce
1/2 teaspoon of paprika
1 lime (cut into wedges)
2 tablespoons of chopped scallions
2 tablespoons of chopped cilantro

Soak the rice noodles in cold water for 30 minutes until soft, then drain and set aside.

In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the garlic and stir-fry for 30 seconds until fragrant.

Add the shrimp to the wok and stir-fry until they turn pink, then push the shrimp to the side of the wok.

Add the beaten eggs to the other side of the wok and scramble them until cooked through.

Add the soaked rice noodles, roasted peanuts, and bean sprouts to the wok and toss everything together.

In a small mixing bowl, combine the fish sauce, tamarind paste, palm sugar, soy sauce, and paprika. Mix well until the palm sugar has dissolved.

Pour the sauce over the noodle mixture in the wok and stir-fry for 1-2 minutes until the noodles are evenly coated with the sauce.

Remove the wok from the heat and garnish with chopped scallions, chopped cilantro, and lime wedges.

Serve the Pad Thai hot with the lime wedges on the side.

Note: You can add other ingredients to the Pad Thai, such as chicken, tofu, or vegetables, based on your preferences. Enjoy!
