Ingredients:

8 oz. of rice noodles
2 tablespoons of vegetable oil
2 cloves of garlic (minced)
1/2 lb. of shrimp (peeled and deveined)
2 eggs (beaten)
1/4 cup of roasted peanuts (crushed)
2 cups of bean sprouts
2 tablespoons of fish sauce
2 tablespoons of tamarind paste
2 tablespoons of palm sugar
1 tablespoon of soy sauce
1/2 teaspoon of paprika
1 lime (cut into wedges)
2 tablespoons of chopped scallions
2 tablespoons of chopped cilantro

Instructions:

Soak the rice noodles in cold water for 30 minutes until soft, then drain and set aside.

In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the garlic and stir-fry for 30 seconds until fragrant.

Add the shrimp to the wok and stir-fry until they turn pink, then push the shrimp to the side of the wok.

Add the beaten eggs to the other side of the wok and scramble them until cooked through.

Add the soaked rice noodles, roasted peanuts, and bean sprouts to the wok and toss everything together.

In a small mixing bowl, combine the fish sauce, tamarind paste, palm sugar, soy sauce, and paprika. Mix well until the palm sugar has dissolved.

Pour the sauce over the noodle mixture in the wok and stir-fry for 1-2 minutes until the noodles are evenly coated with the sauce.

Remove the wok from the heat and garnish with chopped scallions, chopped cilantro, and lime wedges.

Serve the Pad Thai hot with the lime wedges on the side.
