Ingredients:
2 cups coconut milk
2 stalks lemongrass, bruised and sliced
5 kaffir lime leaves
1-2 red chili peppers, sliced (depending on your preferred level of spiciness)
1 tbsp. galangal, sliced
2 tbsp. fish sauce
2 tbsp. lime juice
1 tbsp. brown sugar
1 lb. boneless, skinless chicken breast, sliced into thin pieces
1 cup mushrooms, sliced
1/4 cup cilantro, chopped
Instructions:
Add lemongrass, kaffir lime leaves, red chili peppers, and galangal. Let the ingredients simmer for 5 minutes to infuse the broth with flavor.
Add fish sauce, lime juice, and brown sugar. Stir until the sugar dissolves.
Add the chicken and mushrooms, and let the soup simmer for 10-15 minutes until the chicken is fully cooked.
Taste the soup and adjust seasoning as necessary.
Garnish with cilantro before serving.
