Ingredients:

4 cups water or chicken broth
2 stalks lemongrass, cut into 1-inch pieces and bruised
5 kaffir lime leaves, torn into pieces
1-2 red chilies, sliced
3 cloves garlic, minced
1-inch piece galangal, sliced
1 lb shrimp, peeled and deveined
2 tbsp fish sauce
2 tbsp lime juice
1 tbsp palm sugar
1/2 cup fresh cilantro leaves
1/4 cup green onions, sliced

Instructions:

In a large pot, bring the water or chicken broth to a boil. Add the lemongrass, kaffir lime leaves, chili, garlic, and galangal. Reduce the heat and let simmer for 10-15 minutes.

Add the shrimp and cook until pink and cooked through, about 3-5 minutes.

Add the fish sauce, lime juice, and palm sugar. Taste and adjust seasoning as needed.

Ladle the soup into bowls and top with fresh cilantro leaves and green onions.

Serve hot with steamed rice.
